What software would be good to use for this?

Hey all, I am looking for a solution where I can define variables and have them inserted into a block of text on the fly. The resulting text would only be copy/pasted and not outputted to a file.

For example I would type/paste 'Joe' into a field and hit tab and the block of text below would up date to 'Hi, Joe, how are you Joe' (not for email).

Maybe an Excel spreadsheet, a word plugin, a standalone program or some javascript that I could host. I've been Googling and Googling looking for a good way. Excel seems like a reasonable way but I dont have a clue how to do it.

I will be doing a lot of this so a good solution would save me a lot of time.
