How can I get the little unread mail notification icon (envelope) to show up in the system tray?

you should see the outlook icon near the clock. Right-click and make sure "she new mail desktop alert" is checked

It is. Apparently that is for the transparent pop up showing your new mail.

Open Outlook, click tools then options

[attachment=7931:attachment]

Click E-mail Options

[attachment=7932:attachment]

Click Advanced E-mail Options

[attachment=7933:attachment]

Make whichever changes you need, click OK and apply
