i have just changed to Firefox and have made it my default browser and made IE my NON-default browser
but when i click on certain links like the MSN Email icon, my inbox opens up using IE.
is there a way to fix this?

MSN is owned by Microsoft which owns Internet Explorer. Everything is interlaced with M$.
To my knowledge, no there is no way around this.
