Ajax using what languages?

AJAX uses JavaScript to make callbacks to the server. JavaScript is language independent as it is a scripting language and is embedded directly on the html page. You can use whatever language you want.
In most instances, you will not be writing AJAX directly. You will most likely use an AJAX API that writes all the JavaScript for you. I am an ASP.NET developer and Microsoft has its own AJAX toolkit that allows you to use server-side components and wrap it in a callback panel. The AJAX API then handles rendering the correct script to callback to the server and handle the return trip in an asynchronous manner.
