when you stream videos from the internet...

So, say i load a video from youtube or something like that, it's got to be stored on my computer somewhere right? where would it be stored?

Usually Temporary Internet Files (if using Internet Explorer) or your Cache folder (under Firefox). However if you stream using Media Player or RealPlayer, its usually not saved and if you play the file again it will download it all again as it goes.
