Opening more than one instance of IE to have more than one page open at a time is the old-hat way of doing things. These days we have 'tabbed browsing' so you don't need several windows open. It also uses much less memory. There are three choices for tabbed browsing:
If you have SP2 installed, you can update IE to IE7 which incorporates tabbed browsing as well as higher security features:

Alternatively, you can download Firefox and use that instead of IE:

Then there's Opera, the number three in the browser league-table, but faster than IE or Firefox:
