Thanks for the PSU recommendation James.

Should I be looking at a better ventilated case/case with more additional spots for fans? I've heard the 3870X2 gets quite hot. And the Asus model that I'm getting doesn't shoot the air out the back of the case like the ATi design, but rather has two fans. One on each GPU. Meaning the air doesn't get extracted. So should I be looking at more cooling or a different case?

You should be looking at a different card. You need a case with very good cooling if you are going to attempt to install that card. I know the 4 DVI slots will be temping but I strongly recommend getting a different version of the card like the ATI version.
As for a case, Silverstone makes excellent cases I bought mine from them as well, but the one you have choosen seems like it'll be a tight fit for your graphics card.
I'd recommend on of the cases below. All three are great cases, I'm more familiar with the CM690 and Antec 900 though.
