Visioneer 7100 USB Scanner help

I have this Visioneer 7100 USB scanner in order to scan some artwork before I send it out into public & out of my hands forever. Yet I cannot make it give me the option to select the full resolution that is supposed to be available.

This thing is supposed to be able to scan up to 1200 dpi in 48-bit color, yet when I go to adjust the resolution, the highest available option is 600 dpi in 24-bit color.

It seems there is some sort of limitation I am not aware of.

I have re-downloaded the drivers, re-installed the included software, etc. etc. Nothing is working.

I am in a bind. Please help me if you can!! I have a deadline & I really need some documentation of this work before it is released.
