My MacBook shows the right time on Dashboard, yet the Hotmail message I sent to my son's teacher before 9 am this morning says that it was sent at 12:50 pm - even though it's not even 12:00 now. I have noticed time discrepancies before. How do I correct this?

Go to your "Accounts Summary Page" in HotMail. Click the link "Registered Information". Scroll down to "Time Zone:" and make sure you have that set correctly.

As for your Profile on GTG, go to your Control Panel by clicking the "My Controls" link at top of any GTG page. Under "Personal Profile" on left of page, click "Edit Personal Information". Scroll down to heading "System (Optional)" and change info for system used.
