I know its all garbage but whats better 512 + 256 or 2x 256 ram? For dual channel they need to be the same size right?

Google will help you a lot here. :)

I personally would be using the whole 768MB of RAM and not even thinking twice about whether it's dual channel or not.

Dual-channel is all theoretical and you need to be shifting obscene amounts of data around in memory to notice any difference in reality.
That being said, 768Mb of memory is better than 512Mb usually, depending on the computer and the uses it's put to.
