Which one is best and why? What software is avaible on one that is not on another that makes the operating system better?

It all comes down to what you do on your system and if you have any specific requirements. In short:

Mac OSX: Not Free
Linux: Free

Mac OSX Requires Mac hardware to run.
Linux: Will run on a lot of hardware.

Mac OSX: More Paid Software available.
Linux: More Free software available.

Mac OSX: Closed
Linux: Open
