Wiki software for the PHP illiterate?

Hello everyone,

I work for a low-revenue company that is looking to create a wiki site for information management purposes. We want a wiki site so we can communicate with our customers, they can communicate with us, and they can communicate with each other in a format similar to Wikipedia. We successfully installed MediaWiki, unfortunately none of us have a working knowledge of PHP for the suite to offer us the versatility we would like. Can someone recommend a Wiki software suite that is user-friendly, does not require working knowledge of PHP or another programming language, is easily customizable, and is still visually appealing, etc.? We would prefer something that can be hosted locally and can be customized as easily as a UBB message board.

This may be a lot to ask, but we simply cannot do what we want with MediaWiki without hiring a full-time PHP programmer.
