iTunes deletes playlist from ipod touch

Every time i sync in a new song to my ipod touch,I loose all my playlist. If anyone knows how i can solve this problem with itunes i would really appreciate it. One more thing when i sync in a mp3 song (i have had this problem with a number of songs not just one, songs play just fine with VLC player) the song skips from the on part of the song to some other part then back its horrible.
