Outlook Signature font color

I have a user that when using Outlook 2003 she creates her signature by going to tools > options > mail format > signatures. She edits the font and color within the signatures and stationery section and it seems to look fine. When she then applies everything and clicks on new mail, her signature is yellow. We have completely deleted her signature from the Microsoft folder saved onto the C drive of her local computer. Any ideas on how to fix this would be great!
