opening documents thru email in foreign language

I am having so much trouble with my documents coming from email. Yes, they are opening but it is all in foreign language. I have tried everything to try to get my language. English. When the box comes up to all foreign language, I have pushed every language or there is no english language. Then here I am. I hate to just bring it in for a small issue because we all know how much it cost. Any simple help would be very grateful to me but needs to be simple for me to understand.
