I have an older Averatec 3200 series laptop. It currently has 512MB of Ram, 200 Pin PC2700 DDR SODIMM. According to info I found online, it will support 1GB memory. I have a 1GB DDR2 800 SODIMM PC26400 that I removed from another laptop. Can I use this memory as an upgrade?

No. It's DDR2 and your laptop only takes DDR1.
Therefore it will not fit.
