Need advice building or buying a system for a multiple monitor set up

So I'm trying to find a system to do projections on tour for a band. They have a total of 5 projectors which they would like to each be displaying simultaneously but they would like each of them to be controlled independently and be capable of projecting different material. We have a fairly tight budget for this system around $500 to $600 because we need to buy 2 incase we have problems with one on the road. I have looked into a lot of bare bones systems (rack mount is ideal becuase we need something sturdy) and putting an ati eyefinity 6 card in the system. I have also considered buying a premade system from gateway or something and loading it with a couple more video cards. Another option we have been looking into are these external pci enclosures because it seems like we might be able to use a laptop with these, which would mean we wouldn't have to buy an entirely new system.

Basically what I am asking is what is your advice on a tight budget to get a system that can handle 5 displays.
