Our new office has 3 TVs. All of the cable boxes are stored in a server room.
HDMI wires are snaked through the walls behind each TV to the cable boxes.
We also have cat5 wires snaked behind each TV to the same server room as the cable boxes.

How do I get our remote controls to control each TV ?
I'm assuming I would need some IR receiver/extender/emitter system...can this be 'extended' via cat5?

You are correct. You would need an IR extender.
