AMD took the early lead with Eyefinity, but now pretty much all mid-to-high end video cards support triple monitors. However, there is a difference between displaying Windows on 3 screens and gaming on 3 screens.
If you want to simply game on 3 screens a GTX-670 will probably get the job done. The 4GB version would perform better. 3 screens take 3X the horsepower of 1 screens. It also depends greatly on the size of your monitors, the game, and your expectations. If you want to play a modern game on 3X 27" monitors at highest settings, even 2X GTX-670 in SLI probably won't suffice.

Yeah, if I did do something like that I was looking at something like two SLI GTX-680s. So you don't think that would be enough to run a trio of 23-27" monitors?
Edit: One of the techs at Newegg showed some benchmarks of an SLI GTX-680 setup running a triple monitor setup quite nicely.

Hi brettt777,
Have you a budget in mind?

Actually if I get to do this upgrade, then there won't really be a budget, I'll have the $$$ to do whatever I want.

OK., but be warned, with 3 thin sided bezel screens and mounting frame, it will be a costly build.
So we can have a base configuration to work with, Register on the below site, select you country, top right. the site has a build in compatibility engine which is very good and PSU calculator, (a good guide as a staring point.)

My Dell machine has DVI output which supports dual monitors by using
a dvi splitter cable.

A pair of matching refurb or lease return monitors isn't hard to find
(dvi or hdmi, which both carry audio).

Hi.
How are things going, have you come up with a configuring for your build? An update would be appreciated.

Hi. Sorry for taking so long to get back to you. As so often happens, my upgrade has been delayed. But it will still happen. I will let you know how it turns out. Hope and pray it won't be too much longer.
