Does anyone know of any software that will extract the background music track from a documentary/video and leave the speech track?

not possible as far as I know with video files. I know that it is theoretically possible with audio files to isolate the vocals. I would recommend that you check into the audicity forums. They specialize in this sort of issue. Its not a simple process. not to mention that you could be violating copyright by doing this.

do a google search for how to isolate tracks in audacity. Brings up a bunch of useful links.
