Desktop randomly freezes

First off, I've been running Windows 8 since release. My problem is that my computer has started randomly freezing not allowing me to alt+ctrl+del or do anything. Sometimes it happens while writing and sometimes it happens in the middle of a game (it happens about twice a week). The only thing I can think of that has changed is my NVIDIA driver which was updated recently. I've ran HWMonitor and SpeedFan. I don't fully understand these tools but I noticed my 12V rail in HWMonitor is showing very low values and my Temp2 value on SpeedFan is crazy high (but it hasn't moved). Another thing I've noticed while monitoring these apps is that my GPU temp will fluctuate anywhere from ~5-10° +/-. Is this fluctuation normal for regular desktop usage?

Rollback the Nvidia drive from Device Manager, see if that resolves the problem.
