Would charging £150 - £200 per month for a dedicated server with the following specifications; 3.6Ghz Quad core processor 16GB Ram 900GB Disk Space (6x150GB HDD in Raid) with 64bit Ubuntu server pre-installed (we wont support windows based OS's) - Ubuntu Server would have webmin and openSSH pre installed so that the person renting the server has access to it.

Is this acceptable... and is it a reasonable price?

To set up clients with their web hosting accounts and to keep things, you might want to re-think the idea of opening a web hosting company.
