I would not go for a X79 build,the 2011 socket is a dead end, although the i7 4820K has a larger L3 cache than the i7 4790K it's base speed is a lot slower and for the level of editing you plan, tthe higher speed will serve you better.
I will configure the build on CPP to get best prices for parts.

Your intention to have a local shop build it for you is a good idea as you can get better parts/performance for the money.

The GPU is weak for a high end gamer.
The HDDs are too big, use three 1TB drives, especially for using FRAPS.
