if memory serves some games will always try and use both displays in non widowed game play while others won't and will just display on one or the other screen, so yes it is possible but if my memory isn't playing games with me then it totally depends on the game itself and the way it was programmed.

if the game has the correct settings in it's video display options to set which display to use then what you want is possible if not then you will have to use window mode and drag it to the monitor you want it displayed on.

Full screen games usually open on your primary monitor and the other monitor will still display your desktop. The primary monitor is also the monitor displaying your main desktop with taskbar. However, in windows 8 you can choose to display the taskbar on both monitors (right click taskbar>properties>check "Show taskbar on all displays"). What exacly do need from your non game display?
