I do not own an ipod so I really do not know much about them but I searched for some info that may be of some help.
The first several links is for setting it up.

The second link is for the software. Your particular distro may already have it available in there repositories.

How you would install any software largly depends on what distro you are using. I would recommend searching the site of the particular distro you are using. Here is a few links for a few of the popular ones.

Nice post BKO,
Just wanted to add something, these programs are not like iTunes and they are harder to sync with your iPod than with Windows where iTunes just does it all.
