My guess is that you need to run the disk installer in order to be able to "customize" the installation and therefore remove OneNote, so I would try that.

Insert the installation DVD, and run the setup (the installation file). If it's installed, it should detect it on your system and ask you if you want to modify the installation and from there you can remove OneNote.

had to register to thank you Aura.  your patience and willingness to help is astounding.  I had the exact same issue as the OP and if their result was the same then they did not get onenote removed.  I cant get the install disk so I will just have to ignore it.  first world problem I guess
