I had a error with my pc where I got stuck on the "Choose your keyboard layout" screen, so I decided, after much research, that going back to Windows 7 and fixing it though there was the best course of action. It wasn't. I am not sure why, but after doing this, it seems like Windows 10 doesn't exist on my PC any more, when I go to restore a previous version, it doesn't show up, the same with a system restore, my 'checkpoints' are not there any more, and my last hope is the Windows.old folder, I decided to ask for help on this one to prevent destroying my last hope of salvaging my PC.

Well, Windows 10 probably doesn't exist on your PC anymore if you used the rollback option to revert to Windows 7.  You can use the Microsoft Win10 Media Creation Tool (making sure that you use the Upgrade this PC now option) to apply the Win10 upgrade to your PC again if that's what you're looking to do.
