So it says on the MSI 970 motherboard carries DDR3 ram. I noticed in the numbers 2133 it has an OC next to it. I am planning to buy G.Skill Sniper series 2x8 sticks that has DDR3 2133. Is this an okay choice? Should I pick different ram?

Many users have had issues on that MB getting DDR3 2133 to run stable at that speed. It is not on the MB QVL, > https://www.msi.com/...t/TR10_3193.pdf

The difference in performance, on the Desktop, between DDR3 2133 and DDR3 1866 is indistinguishable.

.RAM height

You will need to do some research to find out the cooler clearance for the RAM.
