Vanishing File Explorer icon on Start bar

Most of the time I see a File Explorer icon on the Start bar of my W10 desktop. But often, for no reason I can see, it disappears. Can anyone tell me what may be happening, what I may be doing wrong?

I'd pin it to the taskbar

You can try to pin it from start menu as shown, just right click on "File Explorer". Since I've already had it pinned to taskbar, the option on yours would be "pin to taskbar":
