In my parts-bank I have the Gigabyte boards GA-MA790FX-DS5 & GA-MA790FX-UD5P.....both have two PCIe x16 slots. My question is are both slots useable if I am not installing two graphics cards? For example, one slot for graphics card and other slot for NIC or video capture card or whatever. I have seen it said that one slot must be left open when not doing the ATI CrossFire (two graphics cards setup).

yes both slots are usable, without getting to involved in the technical side of things (seeing how i'm not 100% sure myself.) the number of pci-e lanes supported depends on the the cpu/motherboard. so even if yours only support 16 lanes total if you plugged something into the second slot the graphics card would be allocated 8 instead of the full 16 lanes (you'd not notice the difference) and the device in the other slot would get allocated the other 8 lanes, so both would work just fine.
