Updated:  I have office fixed completely now, its just this problem now:

Today I have found my self a bit frustrated.

Printer:  Won't keep printing in colour, when I turn on auto config it works, then it goes back to black and white, and I am getting annoyed because I am not sure what else to do I have battled with this setting since this morning.  The things I have tried:

  1. Resetting the printer
  2. Removing all the drivers and apps off my PC and reinstalled it
  3. Kept setting the setting 15x
  4. Rebooted the printer 5x
  5. Set the printer to allow on the network through the firewall
  6. Removed everything to do with the printer and rebooted
  7. Reinstalled again, and still the same thing with this one problem.

Worth a shot to check

Go to Control Panel - Devices and Printers.
Right-click on your printer and select "Printing Preferences".
Now navigate through the menu and make sure the grayscale printing option is disabled.

You Gave me a idea, I forgot that I had windows 10 PRO, so I went to start > typed print > printer management.

I deleted everything in there, and then I reinstalled the printer from there, and the black and colour options showed after that, and I have now got the printer, printing in colour.  Bloody windows.

The only thing is if I want to use the scanner then it reinstalls the network driver then its back to sqaure one.  SO if I have the printer just connected to my PC directly, would this solve the issue?

That's a very good question and I'm able to answer. So it's going to be more trial and error once again. Try it an see.
