I usually update MSE defs by downloading from here and installing:

I haven't used the desktop icon to update in quite some time. I decided to try it yesterday and while it searched and downloaded quickly, it took a LONG time to install. After that the HD light was on for 10 minutes (MsMpEng and one of the svchost items were active). Why would it take so long to install using the desktop icon access?

That's a difficult question to answer. It's a complicated procedure to download an install updates a lot of things have to happen for it to successfully work, the same for Windows up date..., I wish i had a better answer as to why it took longer, perhaps it was a bigger up date then usual ....
The latest up date actually is 1.325.1346.0 released today.
Yours shows 1.315.1295.0 but may have already up dated since then.
