Other than the lack of superdrive, is there a significant difference in performace from the 1.8ghz model of the iMac to the upgraded 2.0ghz model?

I'm thinking about buying one, and settling for the 1.8 would save $200, but if the difference in performance is that significant, I'll shoot for the 2.0ghz model.

Just as with any other machine, more proc power usually means faster performance. A 2.0 GHz proc will run faster and longer (assuming that you update your OS) than a 1.8 GHz. As to whether you will be able to notice a difference, it really depends on what you'll be doing.
