I have a new MOBO. It has SATA (2) and EIDE (2). If I wanted to install a 200G SATA and then temporily install several older IDE drives in order to copy data to the new drive, can I?

If the Operating sytem is only on the SATA drive you should have no problems booting from the SATA...

If there is a OS on one of the IDE drive(s) it will mostlikely try to boot from it..

What are the system specs?

You can solve that problem by setting the boot priorities to always boot from the sata drive first, in bios.
