'Send' command: How do I set the program used?

I'm running Windows XP. Several programs I run like Word, Quickbooks and Ventafax have a 'Send' feature to allow e-mail of data files like word documents or invoices. When this command is used however, the programs all try to send these files through Microsoft Outlook. I want to make them use my own e-mail client which is Incredimail. How can I set the system to use Incredimail in these instances?
