I am unsure how to completely wipe and restore one of the older model imacs. It freezes constantly and is much slower than its original capabilities and I want to be able to start completely afresh.
How can i do this?

i believe you just restart the mac with the mac os, 9? (or whatever os), disc in the drive. immediatley at startup hold the "c" key untill the mac installer starts to load. there should be there an option to wipe the drive, then re-install.
