The trick with MS Word page numbers is to insert section breaks. Each section is numbered separately, so you can have Roman numerals in section 1, and Arabic numerals in section 2. After inserting a section break, move the cursor to the first page of the section and open the header/footer and apply your page number format. There's also a way to set the starting page number, such as when page numbers begin on page ii.
Note that there is an icon on the header/footer bar that you can click to make the section format the same as the previous section. If you do that, the numbering across sections will be continuous. You want to make sure that option is not selected.
Also, when you want to print the document, you must specify the section and page, as in s1 p2. When there's more than one section, you can no longer enter just the page number. However, you can print an entire section just by entering the section number, as in s3.
