Dell scanner saved all files as JPEG

I have about 8 files I scanned and scanner saved them as JPEG. How can I convert them to a regular document so I can edit them? I found out today how to save them as a regular file but do not have the documents now so I can re-scan them and save them right. These files are just typed programs. Thanks bunches for any help. Clint

Google "optical character reader" (OCR). That's the software you need. My HP printer/scanner came withIRIS and it works great.
