How could one avoid the volume mixer settings / volumes to be changed all the time?

Perhaps switching between monitors (WIN+P) has something to do with that?

Is there a portable program that could save one's / those volume settings and restore it?

There very well may be for a third party add on sound card that ships with its own software that can do this but Windows media player is integrated into the OS and not accessible to the average user, someone with the right smarts could most probably hack the registry in some way to do it, not recommended or legal to do so btw.

Very basic but see if Windows own custom settings does anything near what you are hoping to achieve, see guide here

You are welcome btw  :)

I still do not know, may be this option to save the sounds of the sound scheme

will do it. So I now saved the / my settings (hope the ones of the Sound Mixer are included, respectively the sounds / volumes of all of the programs). The next time these settings / volumes are adjusted wrongly again, I will try to activate my sound scheme saved.

Does not work at all. The volumes are changed while my profile is set. I can set another profile, e.g. Win standard, I then can switch back to my profile, but nothing happens. The volumes keep like the are.

Respectively, perhaps these volumes, shown in that sound mixer hereO2x5eUI.png

are not saved in such a profile, but something else, but what else?
