Could House Guest Set Up Remote Access?

Welcome bgrayesq! Sounds like a difficult situation. Remote desktop does allow a remote user complete access to your computer.
Disable remote access by clicking Start -> Control Panel -> System, select the "Remote" tab, Uncheck "Allow users to connect remtotely to this computer". There will be NO remote connections allowed to your computer.
Detection of a remote connection is more difficult (unless you're at your computer when connected). If you really want to know please ask, I'll need to look into it, but I'm pretty sure you need to install a firewall with packet detection.
