While on Yahoo Instant Messenger invisible to everone except one contact, can another contact find a way to spy on me, and know that I am online?

Yes, if that person sends you an offline.

If they send you a message they will know you are online, but if you don't respond, they can only assume you are AFK. If it is a specific contact, right click on their name and choose their personal stealth setting "always show me as invisible to this user".
