Changing the whole AD schema

I started with this company in North Carolina 3 weeks ago and they need to change their schema in a big way. We also need to add another Domain controller from the west coast which has another schema. Presently the domain in NC is names AMSE.LOCAL with the domain being AMSE. The domain in calif. is called AMSEWEST.NET. My plan is to make the domain in NC the true DC and the CA DC the BDC for one domain called AMSE with two forests of AMSEEAST.NET and AMSEWEST.NET. My thinking on this is that I must demote my NC DC and add it back with the new schema, and then demote the AMSEWEST DC to a BDC. Obviously I will have to setup a trust relationship between the two domains, but what problems do you guys forsee with my plan? How much down time will I have and have I covered my rear enough that the change will be transparent to the present users?
