Windows XP Professional vs. MCE

I will purchase a laptop for business purposes. They pretty much all come now with Windows MCE. I had planned to use XP Professional.

I've been told both that Professional is different than MCE and that MCE is an improved Professional version plus added entertainment-related functions so to just take MCE and I'll have an improved Professional vers.

Is this true?

If I had a laptop assembled per my specs, would it make more sense if I had the choice to choose Professional in my case or not?
