with 2000 server...it's not a big issue to remove once you're done evalutating....you could resize the XP partition and install 2000 to it...then when you're done...you'll just need to remove the 2000 partition...resize the XP partition (to make it bigger) then modify the boot.ini in the XP install to get rid of the 2000 reference
