trouble making date query in Access

I'm am trying to do a task which involves making a query with a specific date in mind. Say for example this:

I'm a rep for a parent cheese company and I visit cheese companies from all over many areas. I am meant to visit once a month to each place. I have a table with Name of company, area, and date they were last visited.

What i'm trying to add in is say today is 18 march 2007 and the date i last visited all the cheese companies was all in feb except for say 1. Which i last visited on 2 Jan.

I need to make a query that will see that today is the 18 march and to calculate what companies have not been visited in over a month.

Can you help please :)
