Scanning with all-in-one

When I scan a picture or download from my camera to the computer there are no challenges, HOWEVER. I seemed to have missed something in the set up or directions for when i scan a document to have it be other than just another photo. ability to work with it as a document doesn't happen when it is giving options on removing red eye/

thanks for some info on the finer points of scanning.
