When you scan it saves it as a pdf or jpg or other format and not as text.  Not sure what you want to do but usually OCR software is what you need.  It will convert the scan's output to a text file.  See:

If you want to modify a scan without converting it to text first then you have to use something like Paint or Photoshop to tediously change the characters one at a time.
