I guess you have a quad-core CPU right ? Therefore you should have only 4 processors showing (one for each core). However, Intel CPU (at least, i7) have "Hyper-threading" technology which allow one core to emulate another one, which means two cores per core. Therefore, this is why you see 8 processors (cores) total as you have a "quad-core" (4).
