That's a great build and everything is compatible. Running on stock settings, no heat issues. I hope you don't mind a few suggestions and some observations, not criticism.
The MB is excellent, great spacing for duel GPU. It has 4 pin PWR fan headers and Command Centre temp/fan control, so: worth checking the specs for the DIYPC case. the fans may only have 12v plugs and a fan controllers means only set fixed speeds, no variable speeds settings depending on temps.
SLI. More demanding games with maxed setting may cause the CPU to become a choke point. Lower the setting or overclock the CPU.
RAM for gaming, 8GB is enough and 2666MHz is the sweet spot.

Two SSDs, Better configuration would be one SSD, OS/games and 1TB HDD programs like Office + mass storage and images/backups.
Your GPU performance will be very high and your 3 year old tech monitor will likely suffer tearing and not do the output justice. consider using a 144Hz G-Sync one. If your cards are outputting 85 fps, that's what the moitor will show.
A modified build for your consideration, > http://pcpartpicker.com/list/CLWrM8
If my build, I would go one GTX 1080 and upgrade to a i7 CPU.
