I am trying to create an offline network using Cisco AP. I would like to monitor this network, device IP, mac and operating system OS. Which monitoring software would do this completely offline and can export results as CSV file??

Not sure what exactly you want to know about the network but I always used the free MRTG to monitor my networks back when I was working.  It's been a while so I can't say about the csv output but it's pretty flexible.
